are there ship mods like the fighter bay one that gives you more drone pods?
are there larger ships that have the capacity of multiple drone-menders?
it'd be amazing to see one launching 50 light drones after a fleet an just admire the mess

Sadly 6 fighters or drones per wing and around 6 or 7 bays are the limits on what we can do normally. However, fighters aren't restricted from having bays themselves but that leads to weirdness where one fighter gets popped and half the wing dies

do you mean 6-7 bays as in 6-7 x 6 drones?

Yes but not all wings have 6 fighters and only capital class ships have 6 bays. Vanilla has the Astral which has 6 bays but is fragile. It also has the Legion which has 4 bays but can actually fight other ships.
The Wasp drone can have 6 fighters and is the only one that can have 6. The Claw can have 5, the Talon can have 4.
Note: no mod that I know of that is updated for the current version of the game has fighters with fighter bays on them and only one mod has anything above 6 bays (The Matriarch from Interstellar Imperium has 7)

In general, if you want to spam fighters, you need to get more carriers. Even 4 fighters in a wing is plenty, when there's 4 wings of them and they are all over your arse. Technically, there's nothing preventing you from having however many fighter bays you want on a given ship, it's just that nobody does that.

The fighter Schwarm (or whatever its name was) in older versions of the Neutrino mod had either this or those old drone ship systems. I think it was the latter since proper fighters before 0.8a were more like ships than weapons, and some ships had ship systems that spawned drones.
Before 0.8, some ships had point-defense drones as a ship system. For example, Gemini and Heron before 0.8a had machine-gun drones as a ship system. The Schwarm had a custom version that used copies of itself as a ship system.
Those drone systems have been replaced for standard ships (Astral has Recall Device instead of worthless laser drones), but I do not think those old systems cannot be modded back in somehow.

Fighter wings can indeed use the old drone systems, Arsenal Expansion currently has two fighters doing so. Downsides are that it takes up the fighter's ship system (no flares if you want that) and the drones are destroyed if the parent fighter is.
