I'm loving this game so far. The only problem is my old man eyesight combined with the really small UI is hindering my enjoyment of the game.

I have googled UI scaling/font size and there was some posts about it back in 2018. Is there any recent news about this?

I also tried to search for mods to fix this problem. No such mod exists, unfortunately.

Current best option is to use a resolution smaller than your monitor, but with the same aspect ratio.  Then use autoscaling on your gfx card (or monitor) to full screen the game.
