So the ship_data.csv file contains a value called "number". What exactly does it do?

It's just random to make sure the ship number dosen't collide with another ship, just write whatever you want there (numbers, ofcourse ;D)

It is, nothing important really, i think it's there for each ship not to collide with others?

It's just for sorting. Nothing bad will happen if you don't include one - it's not used or read anywhere.
