How does sector age affect game play?

I don't think it does all that much or at least not to the point where one Sector Age is obviously better than the other.

I think younger systems have "Volcanic" worlds which usually have excellent survey data—lots of ores and they are often Class IV or V. Older systems might have more "Terran" worlds that have farmland and also survey well. But, I think it kinda balances out overall.

I'm simply playing on a Mixed sector.

yeah, sector age influences which types of stars you find, how many and which types of planets are orbiting, and i think also stuff like asteroid fields and such.

i don't believe there's any reason to choose a specific age, at the moment. it will likely have a gameplay impact once the main industry features come around, as the various types of stars and planets also have differing planetary conditions aka exploitable resources.
